Asia Fruit Logistica – Here we come.

We are booked and set for another trip to Asia Fruit Logistica in Hong Kong.

UPSIDE DOWN PEAR CAKE

INGREDIENTS

50 grams of butter
1 1/3 cup of brown sugar
3 medium firm pears (peeled and sliced into eighths)
150 grams of butter
3 eggs
1 1/3 cups of self raising flour
1 teaspoon of baking powder
2 teaspoons of ground ginger
 

METHOD

1. Preheat oven to 180 degrees Celsius
2. Line 22cm cake tin with baking paper
3. Melt 50 grams of butter and 1/3 cup of brown sugar together and pour over the baking paper.
4. Cover the bottom of the cake tin with the sliced pears in a circular pattern.
 
5. Beat together butter and sugar until pale and creamy.
6. Add eggs one at a time, beating thoroughly after each addition.
7. Stir in flour, baking powder and ginger.
8. Spoon cake mixture over pears.
9. Bake for 40 minutes, and once cooked through rest for 5 minutes.
10. Serve with caramel sauce, whipped cream or vanilla ice-cream.
